There is one quiet aspect of most wooden cutting boards that is all too easy to forget about: the glue.
If you've read our content on wood species, grain orientation, and care, you already know that not all boards are created equal. The wood matters. The grain matters. How you maintain it matters. But for any board made from more than one piece of wood — which includes virtually every end-grain and edge-grain laminate board on the market — so does what's holding those pieces together.
Here's what you need to know.
Food-Grade vs. Food-Safe: A Distinction Worth Understanding
Before getting into specific adhesives, there is one term that needs clarifying: food-safe and food-grade are not the same thing.
A food-grade material is safe enough for direct contact with food. Think food-grade mineral oil, or the interior of a food storage container.
A food-safe material is one that — once fully cured — no longer off-gasses, leaches resins, or transfers chemicals under normal conditions of use. It may come into indirect contact with food without posing a health risk.
No wood glue is food-grade. But the right ones are food-safe after curing, and that distinction matters for how they're used and evaluated.
The FDA regulates adhesives under 21 CFR 175.105, which governs adhesives used in indirect food contact applications. That includes food preparation surfaces like cutting boards. A glue that complies with this standard has been evaluated for the safety of its cured form, not its liquid state. The liquid state of most adhesives is a different matter entirely: handle uncured glue with care, and follow all manufacturer safety instructions during application.
The Common Glues
Polyvinyl Acetate Glue (PVA) — The Standard for Hardwood Boards
What it is: PVA is the most widely used adhesive in quality wooden cutting board construction. You may know it by the brand name Titebond, which produces the most commonly referenced food-safe PVA formulations.
Why it's used: Type I PVA glues like Titebond III are FDA-approved for indirect food contact once fully cured. They dry to nearly invisible glue lines, form extremely strong bonds, and are water-resistant. They're easy for woodworkers to apply and clean up, and they sand cleanly when the board is finished.
The safety picture: Fully cured Type I PVA glue is considered food-safe under FDA standards and is the industry benchmark for wooden cutting boards. In liquid form, however, it contains solvents that are skin and eye irritants and should not be inhaled as sanding dust. This is a manufacturing and woodworking concern, by the time a finished board reaches your kitchen, the glue has long since cured.
Polyurethane Glue (PU or PUR) — Waterproof and Inert When Cured
What it is: You are probably already familiar with some PU brands, like Gorilla Glue. It's a one-part adhesive that cures through contact with moisture and becomes completely waterproof once set.
Why it's used: Polyurethane glue is sometimes chosen for its exceptional water resistance — an advantage in kitchen environments. Once fully cured, it becomes chemically inert and is considered food-safe for indirect contact.
The tradeoff: It expands and foams as it cures, which can create messy squeeze-out at glue joints. In tightly fitted laminated boards where clean, invisible joints are the goal, it a less common choice than PVA for woodworkers who prioritize precision. It's more often seen in repairs or specialty applications than in primary board construction.
Food-Safe Epoxy — For Repairs and Decorative Work
What it is: Two-part epoxy adhesives are known for exceptional gap-filling ability and strength. Recommended for display and serving - not knife work.
Why it's used: Epoxy isn't typically used to laminate an entire cutting board, but it's the go-to choice for filling cracks, knots, or voids — and for the resin inlays you see in "river board" or decorative charcuterie boards.
The safety picture: Some epoxy formulations are certified as food-safe for indirect contact once fully cured. This is not universal; food safety must be verified on a case-by-case basis. Only epoxies explicitly labeled as food-safe or food-contact compliant should be used in cutting board applications. Uncured epoxy is significantly more hazardous than other adhesives and should be handled with appropriate precautions.
If you're buying a decorative board with resin inlays or filled voids, ask whether a food-safe epoxy was used. Reputable makers will have documentation.
Glues to Avoid
Urea-Formaldehyde and Melamine-Formaldehyde Resins
These adhesives have been used historically in wood products and composite board materials (MDF, particleboard). Some low-cost cutting boards, particularly bamboo boards from manufacturers who don't disclose their adhesives, have been made using these resins.
Formaldehyde is a known human carcinogen. While the FDA has in some cases approved certain formaldehyde-based resins for indirect food contact in cured form, these approvals apply to specific formulations under specific conditions, not to formaldehyde-based adhesives as a category.
The concern is the potential for gradual off-gassing toxins, particularly as surfaces are scored by knives, washed repeatedly, and exposed to acidic foods.
Cyanoacrylate (Super Glue) and Hot Glue
These adhesives are heat-sensitive and not appropriate for cutting board construction. Cyanoacrylate can break down with repeated washing and temperature exposure. Neither has been evaluated or intended for food-contact applications. Avoid any board that appears to have been assembled with these materials.
The Bamboo Glue Problem — Why This Matters More for Bamboo
Hardwood cutting boards — maple, walnut, cherry, beech — are typically laminated by skilled woodworkers using well-established, documented adhesives. The supply chain is relatively transparent.
Bamboo boards occupy a different world. Bamboo cannot be cut as a solid plank — it's a hollow grass stalk that must be processed into strips and bonded together under high pressure. This means every bamboo board on the market is a glued composite. The adhesive is a structural component to bamboo board construction.
The problem is that a significant portion of bamboo boards sold in the U.S. are imported products with limited transparency about their manufacturing process. Low-cost producers have historically used formaldehyde-based resins. Reputable bamboo board manufacturers now typically advertise "formaldehyde-free" adhesives explicitly — if that claim is absent on a bamboo board, treat it as a yellow flag.
Along with not being particularly knife-friendly or durable, this is is just one more reason to treat bamboo boards as a distinct category requiring extra scrutiny.
The Glue Joint and Board Longevity
One last point: glue joint integrity is a maintenance issue, not just a safety one. This is why keeping boards out of the dishwasher and away from prolonged soaking is critical. Even food-safe, waterproof adhesives are stressed by repeated cycles of full immersion and high heat. Dishwasher exposure will cause glue joints to fail. When a joint cracks or splits entirely, the board is no longer safe for use regardless of the quality of the original adhesive.
Take care of the joints, and they'll take care of you. That means hand-washing, drying promptly, and oiling consistently — the same fundamentals apply to protecting the adhesive as much as the wood.
What to Look For When Buying a Glued-Wood Board
A single-piece face-grain board requires no adhesive at all — it's one slab of wood. But single-piece boards are less common for prep, and end-grain and edge-grain laminated boards are the majority of quality options.
When evaluating a board, look for adhesive disclosed by name or standard; language like "Titebond III," "Type I PVA," or "FDA 21 CFR 175.105 compliant" tells you the maker knows what they used and why it matters. For imported boards, some evidence of a transparent supply chain, or a maker who will answer direct questions about their materials, is a reasonable baseline to expect. Reputable manufacturers know consumers are asking these questions, and the ones with nothing to hide tend to answer them unprompted.
Treat the absence of this information as a warning sign. A board that offers only vague "non-toxic" claims without citing any compliance standard is telling you there is a hidden compromise. So is a very low price combined with unknown origin. For bamboo specifically, no formaldehyde-free claim on the packaging or product listing should give you pause.
